Fall is Coming! 5 Quick & Healthy Meals That Taste Like an All-day Recipe

Its almost that time of year again! The crisp cool, air. The kaleidoscope of falling leaves, harvest festivals. Fall is also a time to snuggle up and enjoy some deliciously heartwarming and melt in your mouth meals with the people you love. Or alone, whichever you like. However you like to spend time, no one likes spending all day in the kitchen.

Here are 5 quick and deliciously healthy meals that taste like you spent all day preparing. After all, Fall is fleeting and you want to make time to get out there and enjoy the season!

#1) Fettuccine Alfredo with Smoked Salmon and Broccoli

This one is sure to be a winner with adults and kids alike. Richness in calcium, vitamin C, and protein. Super easy and very tasty!

You will need:

8 oz. package of Fetuccini Alfredo

Smoked Salmon

7.5 oz. Creme Fraiche (can be found at most specialty food markets),

Fresh Parmesan Cheese

2 cups of broccoli florets

1/2 cup Chicken or Vegetable stock

3 Tbsp. of Extra Virgin Olive Oil

2 Cloves of Garlic (minced)

Salt and pepper to taste.

First boil the fettuccine according to package directions, with 1 tbsp. Of Olive Oil and and salt. Meanwhile, heat a large skillet to medium heat. Drizzle with 2 Tbsp. Of Olive Oil and add garlic and cook until aromatic.

Cut up smoked salmon into big chunks and add to garlic in skillet, cook to desired taste and set aside. Next, add broccoli and 1/4 cup chicken or vegetable broth and cover until tender.

Turn heat down just a little so that everything sizzles. Drain pasta and add to smoked salmon mixture in skillet. Then Add the entire tub of Creme Fraiche and toss until melted.

Serve warm and sprinkle with Parmesan cheese.

#2) Italian Sausage and Potato Bake

A healthy and hearty meal that is warm and filling as it is healthy. delectable and  perfect for the cooler months!

2 pounds Italian Sausage

4 large Russet Potatoes

1 large Onion

1 large Green Pepper

1 large Red Pepper

1/2 cup of Chicken Broth

1/2 cup White Wine

1/4 c. Olive Oil

Some Italian seasoning

Salt and pepper to taste

Preheat oven to 400 degrees Fahrenheit.

Heat skillet on stove to medium heat, then saute the sausage until sizzling and fully cooked. When done, transfer sausage to baking dish.

Next cut potatoes into small wedges, add 1/4 olive oil and cook until the potatoes are browned, when done, transfer potatoes to baking dish, as well, leaving some oil.

Chop red and green peppers and onions, then cook until onions are translucent and peppers are softened. Add to baking dish.

Sprinkle with Italian seasoning, salt and pepper to taste.

Bake for about 45 minutes, or until potatoes are tender.

Serve warm.

#3) Beef and Broccoli Stir Fry

1 Pound of beef thinly sliced

4 cups Broccoli florets

1 clove of Garlic

1/2 Onion

1 can Beef Broth

1 tbsp. Brown Sugar

2 Tbsp. Cornstarch

2 Tbsp. Soy Sauce

1/4 tbsp. Ground Ginger

1/4 tsp. Onion Powder

Salt and Pepper to taste

Heat stove to medium heat for 1 minute. Add beef, onion, and garlic and stir until fully cooked. Take mixture off heat.

Set aside and keep warm. Next add 1/2cup of beef broth and broccoli to pan, cover and let cook until broccoli is tender but crisp.

Next, mix soy sauce, brown sugar, ginger and cornstarch to remaining broth, then add back to the pan, with the beef.

When done, serve with broccoli. Rice is optional

#4)  Pumpkin Quesadillas

This is a really fun fall recipe that is as festive as it sounds!

Rich pumpkin flavor melts in your mouth between two warm tortillas. This will surely be a go recipe family meals that is also great as a snack.

2 cups canned pure pumpkin puree

1 teaspoon ground cumin

8 8 -inch flour tortillas

4 ounces goat cheese crumbled

1/2 cup chopped walnuts toasted

1/4 cup vegetable oil

In small bowl, mix pumpkin and cumin. Spread over 2 tortillas. Sprinkle with cheese and walnuts. Top with remaining 2 tortillas.

Next, heat skillet to medium low, add some of the vegetable oil, cooking one tortilla at a time, on both sides.

Add remaining oil while cooking remaining tortillas on both sides. Cut into 8 slices and serve warm.

#5) Garlic Chicken

Simple and to the point, this crispy garlic chicken will satisfy taste buds and hunger while serving up a savory bite.

Ingredients include:

1 1/2 pounds halved Boneless Chicken Breasts

1/4 cup Butter

6 cloves Crushed Garlic

2 cups seasoned Dry Bread Crumbs

Preheat oven to 400 degrees Fahrenheit.

In a saucepan, melt butter with garlic, then add chicken, distributing butter on both sides. Next, dip chicken into bread crumbs, then place in a 9X13 inch. baking dish. Bake up to an hour.

Serve warm with any side.
